While the Exoglass handle is dishwasher safe, it is highly recommended to hand wash the steel mesh to preserve its shape and prevent potential damage.
The 200mm measurement refers to the diameter of the top opening of the chinois, which is approximately 8 inches.
While the materials are heat-resistant, a chinois is designed for straining. It is not intended for use as a frying basket.
The Exoglass handle is specifically designed to be heat-resistant and will remain cool during standard use over stovetops.
Exoglass is a composite material developed by Matfer Bourgeat that is resistant to high temperatures, does not deform, and is non-porous.
This is often caused by trapped particles; gently tap the side of the frame or use a spatula to clear the underside of the mesh.
Soak the chinois in warm, soapy water for 10 minutes to loosen the debris, then use a soft nylon brush to gently push the particles out from the reverse side.
Using the chinois is straightforward: simply hook the device onto the rim of your pot or bowl before pouring the contents of your pan into the center of the mesh. Use a heavy-duty pestle or ladle back to press liquids through the fine weave. For care, it is highly recommended to wash the chinois immediately after use to prevent food particles from drying within the fine mesh pores. While the Exoglass handle is durable, the steel mesh should not be scrubbed with abrasive steel wool, as this can widen the mesh gaps or damage the metal finish. Rinse with warm, soapy water and a soft nylon brush, then ensure it is completely dry before storage to maintain the longevity of the steel.
