To ensure food safety, always sterilize your glass jars in boiling water or a dishwasher sanitizing cycle before filling. Ensure the glass is at a similar temperature to your contents to prevent thermal shock. When filling, leave a small amount of headspace to allow for the natural contraction of contents as they cool, which aids in the creation of the vacuum seal. For cleaning, the glass jars are dishwasher safe, but it is recommended to wash the metal lids by hand in warm soapy water and dry them immediately to prevent surface oxidation or discoloration of the gingham pattern.
